For maimai it's just first knowing where the buttons are, then reading the circles from the middle and tap them to the rhythm of the songs (with yellow as double taps and stars are slides). Pattern recognition that's all :)
Or you could play it so many times that you basically memorized the whole song and where to tap. You'll usually remember which parts are the hardest that you missed then work on those and after playing longer you can be a master
