500g pork ribs (ask the butcher to chop into bite sized chunks)
1 thumb sized piece ginger (roughly chopped)
3-4 spring onions (roughly chopped)
2-3 star anise (whole)
1 stick cinnamon (whole)
1 tsp fennel seeds (whole)
5-6 whole dried chilies (whole)
4 tbsp Shaoxing rice wine
4 tbsp rock sugar
1 tbsp light soy sauce
3 tbsp dark soy sauce
chicken stock / hot water to cover

I tried this and it was delicious. I used cumin seeds as I didn’t have fennel, and ordinary brown sugar. My dried chillies(home grown) were not as hot as I would have liked, but this turned out to be yummy 😋👍🏼. Thank you

I was wondering about the term „oriental“ … this hasn’t been used before. It was named Asian cookery school before. Anyways, school of wok is awesome and I love recreating their recipes.

My pork rib meat came out so chewy it was inedible. IDK why
how long would it take you to make this dish, if you had to make all the sauces and gather all the ingredients? Asian food is so delicious, but so complicated in away.
Most things you'd expect people to keep in, the dried chillies, soy, vinegars/wines etc, if I was going to make this, all I'd need to do would be pop to my local butcher who would sell me the pork and the stock (only because I'm too lazy to make it), lots of things like cassia bark, herbs and seasoning are inexpensive and keep for a long time, so if you haven't got everything you need, find some things that share ingredients and start to buy one or two items with each shop and before you know it, you'll have everything in your pantry for whatever takes your fancy.

You have to let the soy ferment, so you’re talking a long ass time to yield one bottle

You have to boil longer to make it soft
