    Cooked low and slow and seared in rendered beef fat before being draped with cheddar, these patties have all the charm (and flavor!) of Texas-style smoked brisket, but they’re ready in a couple of hours-smoky, beefy, with a seared crust that’s eerily similar to a brisket’s craveable bark. Top ’em with pickles, red onions, and a mustard-ketchup-mayo spread, they’re an upgrade on your regular old backyard burgers-you’ll never go back!

    Burgers are typically salted on the surface right before cooking to avoid textural issues (i.e. avoiding a tight, sausage-like consistency if salt is mixed into the blend). Given the slow smoke cook, are there textural effects that come from the salt working its way into the meat while it smokes?

    The "pickles" are just too fresh. Look like cucumbers barely soaked in something very quickly. They are way too thick also. And the pickled onion over that? Nooooo. Please use really Dill Pickles and fresh white onions like the masters.
