How to prepare the best nkatenkwan (groundnut or peanut butter soup)

  • When my mum serves you nkatenkwan or groundnut soup, you will be always looking forward to when you get to enjoy that amazing soup again. I am sharing her recipe with you and I hope you enjoy it. The groundnut used in this soup is pure groundnut paste (peanut butter) with no sugar or any additives. Also, I use withered or wrinkled garden eggs in all my soups (if I have garden eggs) because Mama believes that makes the soup creamier and and tastier than fresh garden eggs.
    Ingredients:
    450 grams Groundnut paste/ peanut butter (about 2 cups)
    3.5lb Goat meat
    60 grams Ginger
    5 medium tomatoes
    2 large onions
    4 garden eggs (ripe and wrinkled preferred)
    2 habaneros
    1 teaspoon aniseed (nkitinkiti)
    About 1½ - 2 teaspoons salt, or to taste

    It's good but u can add a little bit of tomato paste to the groundnut paste at the point of frying it. It gives it a better colour

    Hello my friend.I made the peanut soup and felt like I'went to heaven.I made sure I used the eggplant.2 big ones and I did not strain it.I want everything in there.I also used a lot of cashew and 1 cup peanuts grounded.Homemade oven smoked salmon oven smoked whitening fillet goat smoked turkey leg and cow skin and cow foot.Oh also smoked red herring.My 8qt pot was over full. Also 2 big carrots .I froze some and I murdered the rest.I had never tasted anything so good.I dont have to cook for anyone so thats what I will make for thanks'giving 2021 Gods willing.I will stay home'and'eat .My girls order food.They are vegans.     Ok fam, I need to say even though this is how I was taught to make groundnut soup, I don't use garden eggs always since it is hard to find where I am. The soup still turns out great but definitely better with it in. This is to say you can still use this recipe and omit garden eggs if it is not readily available to you.

    It’s making my mouth water. I miss having good Ghana soups and stews. I live in Virginia Beach Virginia and the African restaurants here are not good. I found one person that cooks good and she stop last year during the pandemic. I have tried cooking it but it’s not good.

      Hello love. For a better taste I will say try and get plain peanut butter. You will find some in most grocery stores. Most likely in the organic section. Jiff and most other brands have other additives like sugar and the taste will be compromised.

      You can use the purple eggplant take the skin off and you can use it as you use the garden eggs

      You can even use less
      It depends on the number of people who will enjoy and if you are the only person the quantity you like.
      The type of meat will also tell.
      Aside that it doesn't cost
