Pork pie for Andrew 🥧

  • Ingredients for 6 pies
    - 500g pork belly, skin removed and diced
    - 500g pork shoulder or pork scotch, minced
    - 1 tbsp back pepper
    - 1 tbsp dried thyme
    - Salt to taste (pan fry a small about to check for seasoning)
    - 600ml boiling water
    - 350g lard
    - 20g salt
    - 1.36g bread flour
    - 400ml chicken stock
    - 8 gelatine leaves
    - 1 egg, beaten
    Method
    1. To make the filling, simply mix the pork with the pepper, thyme and salt to taste. Leave it in the fridge until you need it.
    2. For the pastry, mix the flour and salt. Make a well in the centre and pour in the boiling water.
    3. Use a wooden spoon to bring the dough together, then when it is cool enough to handle, use your hands to start kneading the dough.
    4. Knead the dough for 5 minutes on the bench, using as little flour as you can.
    5. Once smooth, wrap it tightly in cling film and leave it in the fridge to rest for 1 hour.
    6. Remove from the fridge and roll out until it's about 50mm thick.
    7. Using your small cake tins as a guide, cut out the top and cut a small hole in the centre for the steam to escape.
    8. Now line the cake tins with the pastry.
    9. Fill the lined cake tins with the pork filling and place the lid you cut out on top and crimp the seam well.
    10. Remove the sides of the cake tin but leave it in the bottom.
    11. Brush the whole pie with the beaten egg wash.
    12. Cook the pies in a 150°c oven for 1.5 hours.
    13. Remove from the oven and leave to cool for at least 1 hour.
    14. For the jelly, soak the gelatine leaves in cold water and heat the chicken stock until it just starts to boil.
    15. Squeeze all the water from the gelatine leaves and whisk into the stock.
    16. Pour this into a squeezy bottle and let cool for 30 minutes.
    17. Squeeze the stock in each pie to fill all the gaps that have been created from the pork shrinking.
    18. Leave these in the fridge overnight to set properly.
    19. Enjoy!

    Hi Andy 😊 I’m a diver and a spearfisher … based in Sydney. I catch lots of excellent fish Eastern Rock Lobsters and Blacklip Abalone and more. I remember Kiwis do great Paua Fritters. It’s been years since I tried the Kiwi versions but I do a version of Abalone sliders in which I mince the Abs and bind with a little salt. I would really love to see your take on Abalone. Fritters sliders whatever! Love your channel, your passion is addictive so I’m sure your up for the challenge. Cheers Rob/zmonsterk

    I am happy to see a traditional English dish. English cuisine is often overlooked but I believe deserves more exposure and recognition.

      I am from Pakistan originally, but have mostly grown up in England, and I totally agree with you. I think the reason it's overlooked might be that, because it often uses a relatively low number of ingredients compared to other cuisines, it requires each of those ingredients to be of high quality and the cookery to be precise and skilled.
      When most classic English dishes were invented, ingredients were generally fresher and higher quality. Modern access to cheaper, lower quality, less fresh ingredients, and the mass production of English foods, has meant that the average pie or sausage roll isn't great. But my god a good pie or sausage roll is still a thing of beauty, even to someone who grew up eating less "simple" food at home.

    The greatest pork pie I've found is Piper St Foods in Kyneton, about an hours drive from Melbourne CBD..
    It's well worth the two hour round trip I do to fetch a couple of delicious, stunning pork pies...

    What is up chef, I would have a recipe for you to try. When I've seen the pork you just used, I immediately got hungry. One of national dishes of my country (the Czech Republic🇨🇿) is "knedlo-vepřo-zelo", which is, as the name says, basically pork with dumplings and cabbage. It would be an honor for me if you gave it a shot. Hopefully I will see that being prepared. Tomas

    Hi Andy, a big Northern Irish hello. I’m just found your channel a few weeks ago & is fast become one of my favourites. How about trying an Irish breakfast Soda. Lots of variations of this but I personal like my soda bread with bacon, nice runny fried egg & maybe some black pudding. Not sure if Soda bread is just an Irish thing but would love to see you try & make you’re own. To be honest nothing as comforting as warm fresh soda bread with lots of melted butter, simple but feel like a warm hug. Keep up this awesome content, many thanks

    I'm Native American, full Navajo back for generations. Anyway, I'd love to see your take on our classic Navajo taco. It's Navajo fry bread, NO yeast cuz that makes it a scone.
