I may be wrong but I remember that people could get the gauge tested at the county extension. Or maybe where you bought it. Don't know if either place would adjust it. Hopefully you can get things working, again soon!!!

Sadly I've never used my brand new but 4 yr. old All American canner, because I found out from you { heartfelt thank you} that my stove top needs to be level in order to 'safely' pressure can, unfortunately and sadly mine is not level & can't be adjusted. I do water bath can, & just completed home grown Strawberry-Rhubarb jam. I hope it is 'ok' to 'water bath can' on an un-level stove top.

Regardless of the gauge, the weight tells you it is up to pressure so it would have been fine to pay attntion to the jiggler. One reason I like the All American. If we ever can't have the gauge tested, the jiggler is the key to knowing it is up to temp.

The dial gauge on AA canners isn’t to be used to tell when the canner is at the proper pressure. As long as the jiggler is jiggling the canner is maintaining proper pressure and is safe. The weight really is a more reliable indicator of pressure than the dial because it doesn’t require calibration.

Interesting that your scale on the pressure gauge is bent at the top towards the glass. I bought a used AAC 921 ½ on eBay. I received it two or three days ago. I was curious if everything worked as it should, I don't know when it was produced apart from the fact that it is from before 1995. I noticed my scale on the pressure gauge, which was bent about 10 mm below the top edge, towards the glass. I disassembled the front with the glass and the back to straighten the scale so that the pointer does not go against the scale. The pressure gauge works in the way that a circular piece of flattened tube/bimetal, in copper, with a diameter close to max Ø in the pressure gauge housing and some gears. The pressure in the canner pushes the bimaterial out into a larger diameter and the gears move the pointer on the scale. Very Georg Gearless, but it works. My theory about the bent scale is that the pressure in the canner has been higher than the bimetal could handle, so the bimetal was deformed/overturned to one side and has pushed the scale crooked. In mine, the scale is made of relatively strong metal. I found that when I fixed it. It didn't turn out perfectly straight and nice again. I could not immediately dismantle the scale to be able to correct it more precisely, but it is ok in relation to the pointer being able to pass by. I have ordered a new wind pipe and weight to replace the original petcock. So, if my thesis holds, it could be the explanation for the bent scale. My bimetal part looks fine and normal without deformation and seems to work normally Overheating can occur when the canner boils dry of liquid, at too high a heat source. The safety valve on mine is supposed to release at 23-27°C, so the canner has probably been without liquid at very high heat. Of course, it could also be a fault in the pressure gauge watch.
Do you use a Presto? I know the Presto’s you can do that but never have with the AA. I can not be sure that temp was accurate. My spirit told me to not trust it. Not worth the risk. 👀
Hi neighbor, we did 6 quarts of green beans with a mix of water and chicken broth and my jiggler started going when the dial gauge was at 9 lbs. so I was a pound off with the dial gauge and ran it at 10 lbs. which I guess was about 11 lbs. and where I like to run my canner, the last 7 minutes the heat was on low and the gauges were both running good. shooting for 20 quarts but we'll see. Absolutely! For pints I used 1/4 tsp canning salt, 1/2 tsp dehydrated minced onions and 1/2 tsp whole black peppercorns. I doubled those amounts for quarts. Happy Canning!!!!!

All pressure canners are aluminum to my knowledge. That should only be an issue if you use it to cook food in, which I do not. My food pressure cooker is an Instant Pot and that is stainless steel Pressure. Canners however are different and your food is protected inside the jar. 😊 Anything that may leach out will never go back in the jar. Hope that helps. 😁❤️
