    Here's a simple and delicious recipe for homestyle mutton curry using a pressure cooker, perfect for 500 grams of mutton:
    Ingredients:
    500 grams mutton, cut into pieces
    2 tablespoons vegetable oil
    2 large onions, finely sliced
    2 tomatoes, finely chopped
    2 tablespoons ginger-garlic paste
    2 green chilies, slit
    1/2 cup plain yogurt
    1 teaspoon turmeric powder
    1 teaspoon red chili powder
    2 teaspoons coriander powder
    1 teaspoon cumin powder
    1 teaspoon garam masala powder
    1/2 teaspoon black pepper powder
    Salt to taste
    Fresh coriander leaves for garnish
    Whole Spices:
    2 bay leaves
    4-5 green cardamoms
    4-5 cloves
    1-inch piece of cinnamon stick
    1 teaspoon cumin seeds
    Instructions:
    1. Preparation:
    * Clean the mutton pieces and pat them dry.
    * In a bowl, mix the mutton with yogurt, turmeric powder, and a little salt. Let it marinate for at least 30 minutes.
    2. Cooking:
    * Heat the vegetable oil in a pressure cooker over medium heat.
    * Add the whole spices (bay leaves, cardamoms, cloves, cinnamon, and cumin seeds). Sauté until fragrant.
    * Add the sliced onions and cook until golden brown.
    * Add the ginger-garlic paste and green chilies. Cook for a couple of minutes until the raw smell disappears.
    * Add the marinated mutton pieces. Cook on high heat for about 5-7 minutes, stirring occasionally, until the mutton is browned on all sides.
    * Add the red chili powder, coriander powder, cumin powder, and black pepper powder. Mix well.
    Pour in about 1 cup of water (adjust the quantity based on the desired consistency of the gravy). Stir well.
    * Close the pressure cooker lid and cook on high heat until the first whistle. Then reduce the heat to low and cook for an additional 15-20 minutes.
    * Turn off the heat and let the pressure release naturally.
    3. Finishing:
    * Once the pressure has released, open the lid and check if the mutton is tender. If not, cook for a few more minutes under pressure.
    * Stir in the garam masala powder and adjust salt to taste. Simmer for another 5 minutes without the lid to thicken the gravy, if necessary.
    * Add the fried potatoes in the gravy and cook for some time.
    Serving:
    Serve the homestyle mutton curry hot with steamed rice, chapati, or naan. Enjoy!
