Frankie, have you tried rus?
They got knights which you like, but also strong vs harassment, free gold from bounty and hunting cabins and their towers carry 8, so you can go out on the map with 8 vills kill a boar and be pretty safe.
In late game they have Streltzy strong af and 20% cheaper siege.
