Interesting that was an intense heartbeat right before the transformation. Almost like it either takes a lot of concentration and effort, or the opposite in that it was out of their control.
The fact that Mimic is a clone of someone also raises a lot of questions, unless i'm entirely misunderstanding what those last few lines meant. Just who are they taking the form of, and why?
The immediate assumption that Mimic is resorting to violence upon transforming is fascinating. If Mimic actually wanted to hurt them, they certainly could have. The two were right there in front of them; Mimic could've attacked at any time. Instead, judging by the banging sounds, they moved leave. It could be that they were bashing against a sealed door of some kind, but given that the sounds become more distant after a while i'm going to assume it was heavy footfalls. In fact, the damage that Rudy takes is from the pyrokinetic sent in to subdue Mimic, or at least that's what it sounded like. There was no violence from Mimic. I guess Rudy and Finch panicked upon seeing Mimic explode into a mass of tentacles and assumed violent intentions? They seem very certain that people would get hurt if Mimic escaped, though. I might be missing some information.
Point four, Mimic was either made, or experimented on, in a lab. Not much to explain here, I think you can extrapolate why that's important.
Point number five, there was nothing that seemed to specifically provoke Mimic. Their transformation just sort of happened out of nowhere post-assessment. This will be relevant in the conclusion.
And finally, Mimic is being PAID to do this, meaning they both have use for money and an incentive to stay compliant. They have no reason to do what they did unless they're the testing facility unwillingly. I'm going to guess that they are though, given that they're being paid, which implies a reward for taking time out of their life for this.
So, i've come up with three theories as to what happened here, in the order from what I find least convincing to most convincing:
1: Mimic intentionally activated their powers after the assessment. Not much evidence for this aside from the heartbeat possibly indicating that they're trying extremely hard to transform.
2: Mimic's "eldritch form" is the default, and it takes active concentration to stay in "human form". The fact that they only transform while copying Rudy is what makes this more convincing than the latter point to me, as it would certainly take a lot of concentration to not only hold up a disguise, but try and alter that disguise just enough to look right while also copying another person's powers. Maybe it took so much effort that it led to a catastrophic glamour failure? This would also make their attempted escape less of a violent rampage and more of a "Oh god someone saw what I really look like, I need to get out of here before they try and kill me" reaction. Which, to be fair, isn't far off from what happened.
3: Mimic had no idea about their "eldritch form", and it only shows up in response to stress. This one I think is the closest to the truth for a couple of reasons. One, from what we can gather, Mimic isn't exactly a social person. They don't talk much in the first place, and the first thing they ask upon Finch's introduction is if they have to talk to them at all. Being tested in a strange lab and talking to people you don't know and don't particularly like would be pretty stressful. Two, "eldritch form" only activates AFTER their attempted mimicry of Rudy is critiqued. While not all that stressful, criticism doesn't exactly feel good, and it may have been enough to push them over the edge. Three, you know what a heavy and rapid heartbeat is a signal of? Stress and fear. All this adds together to make this by the possibility with by far the most evidence backing it. This would, like theory number two, lend to a different interpretation of the containment breach, becoming a negative feedback loop of panic that isn't broken until they're subdued. This also leads to two sub-theories about "eldritch form" in itself, in how Mimic wouldn't have known about it's existence. Either they've just never been stressed enough for it to activate, which is the boring option, or, more compellingly, they forget about it whenever they return to normal. After all, they already forget how their borrowed powers feel after they wear off, who's to say it wouldn't apply when transforming into their other form?
I have more theories as to what's going on here, but oh my god this comment is way too long. I genuinely didn't intend to turn this into an essay. Goodnight y'all, I need to rest my fingers.

I think conclusions 2 and 3 are most likely, maybe a mixture of them, like Mimic knowing that they do things when they black out, but not quite knowing what they turn into or do, and having long periods of memory loss. Given that we have the most evidence for conclusion 3, that one might be more likely. Makes me curious about how the agency will react to Mimic's other form, if it'll just be the lab all over again.
