QUICK CHICKEN BIRYANI
Ingredients
1 Kilograms chicken on the bone, cut into 2 inch pieces
750 gm long grain basmati rice, soaked for 30 minutes and drained
Salt to taste
1 tbsp red chilli powder
1 tsp turmeric powder
2 tbsp coriander powder
2 tsps Chicken Masala or Biryani Masala + for sprinkling
1/2 cup yogurt plus 1 tbsp
2 tbsps ginger-garlic paste
5 tbsps freshly chopped coriander leaves + for garnish
2-3 green chillies, chopped
A few mint leaves + for garnish
1/2 cup fried onion ( Birista ) + for garnish
1 black cardamom
2-3 green cardamoms
1-2 bay leaves
1 inch cinnamon stick
½ inch mace
2 star Anise
1 tsp Cumin seeds
1½ tbsps ghee
1 tbsp oil
2 medium tomatoes
6-7 mint leaves + for garnish
A large pinch of saffron, soaked in warm milk
1 tsp kewda water
coal to smoke
