one of the things I noticed is that in the end, the laminating butter has incorporated into the dough more than used to keep those layers apart during the baking. I would suggest you ensure the dough and l.butter are at the same temp (around 16-18c is always workable)... during your laminating process. Also, when letting them rise before the bake, ensure they have the jiggle or they are not ready to go. good luck

Well, nothing wrong with small croissants - means you can eat more of them :P Bought the course a couple months ago and have yet to give it a try!
