It realy does not take up the same space as tofu, at all, but it is great in its own right

It's fairly much like a Turkish delight (fresh made has this consistency), but without the sugar.
Kudzu is good for ppl who want to quit drinking.

I will definitely make a dessert out of this (and use a blender 😄) I suppose any starch would do? I have a good supply of potato, tapioca and corn starch

I think I may just be a heathen and use cornstarch or potatostarch for this - since if the kudzu starch is essentially just the starch extracted from the plant root, it should be around the same thing / same properties hopefully in setting it.
. . . It will set, but the texture will not be the same, the starches have different properties after all
It's not tofu. It's starch gel! 😭
