You know, the CRH380A is not the fastest train on rail, Actually it is the Alsthom V150 (TGV) french hight speed train who did set a speed world record on rail at 574,15Kph

Actually in real life it is designed to also make the ride comfortable. I rode in it and its even better than on a plane.

Question bro. I've seen in the past that the when players control the regular train in GTA, they have to take the corners very slowly and carefully, otherwise, they would derail. Is there a mod that keeps this train on the tracks going that fast?

The real CRH 380A is designed to operate at max speed of 380 km/h, thus the 380 designation, so your test run at 200 km/h is a piece of cakecompared to the true capacity of the train...Now google CRH 400, that's the next gen bullet train out of China debuted earlier this year that operates at 400 km/h!
