EASY CARAMELIZED PORK BOWL | TODDLER FRIENDLY… OR AT LEAST IT WAS 1.5 WEEKS AGO

- CARAMELIZED PORK BOWL
1.5-2 lb ground meat of choice- I used ground pork
1 small onion, diced
1 TBSP garlic, minced
2 tsp ginger, grated or minced
4-5 TBSP brown sugar
2 TBSP fish sauce
Oil for cooking
Thai chili or red pepper flakes, optional
1. Heat up oil. Sauté onions, garlic and ginger for 2 mins or until fragrant.
2. Add ground turkey, cook for 2 mins breaking up any large clumps
3. Add 5 TBSP brown sugar and 2 TBSP fish sauce. Combine well then allow to cook untouched, uncovered for 2 minutes. Repeat this 2-3 times
4. Serve over rice with veggies of choice

So happy for your pregnancy! Yeah dragon baby!!! Hubby and I are pregnant with our second and our toddler is about to turn two! I am struggling with this morning sickness. All I want to do is rest, but I am trying to push through and try to be active. It’s sooo hard. I envy women who have no morning sickness!!!! I was hopeful maybe I would be one of those women the second around, but nope. It’s even worse! I’m also still nursing, so I get even more nauseous while nursing. 😣 Ugh, must push through! I usually don’t tell anyone I’m pregnant until I hit second trimester, but I think my symptoms and sick expressions will give it away. I gotta survive this first trimester! To all the pregnant mothers out there, may you have a smooth sailing pregnancy! So excited for our dragon baby!!! Praying for a healthy pregnancy!

No legit Vietnamese would use jarred garlic...aromatics have to be fresh. There's a funny Vietnamese lady on IG who calls jarred garlic jar-lic and she is so against them.

Why not caramelize the sugar first like in thit kho and other caramelized dishes? It might achieve better flavor and color. Have you tried making the version with lemongrass and shrimp paste? OMG, childhood favorite and still love it to this day. My whole family calls it stinky pork and adults and children alike love it. My nephew loved it so much, he would take it to school as his lunch when he was in elementary school. I was shocked when my SIL told me this and my SIL was like, "Don't worry, he didn't heat it up in the microwave and stink out the school." LOL
