Ok, shouldnt the government help these people automate this same process they have been using for - since forever - in the unsavory environment where they process "food" for human consumption. Little wonder I eat garri and am biting on so much sand and rocks. Ive had to have a tooth filled by a dentist once after a rock I bit in garri, I dont get these rich people, they eat this too and theyve never thought to improve the process of these people.....shake my freakn head!

why do they put weight on it? why dont they just dry it straight away?

The weight drains it of liquid (starch). If you dry it right away, it becomes gummy and sticks into a lump when you fry it.
There is some science to it but sadly, I cant give you the chemical breakdown.
