  • Scallion pancake(蔥油餅) is a kind of pan fried unleavened flatbread. It’s a well known Chinese street food, it can be snack or a meal. You can also bring it to a party or a picnic. It's often served with dessert, side dishes, soup, drink, or a bowl of congee. Because it’s really easy to make, I like to make my own instead of buying from a store. In this episode, I will show you how I make it, cook it ,freeze it, and how to cook frozen scallion pancake. Give this recipe a try. The aroma of fried scallion will make you hungry.

    ===Ingredients(6 pancakes)===
    --Pancake dough
    All purpose flour 400g/14 oz
    Hot boiling water 280g/9.9 oz
    Scallion 110g to 225g/4 to 8 oz
    --Oil mixture
    All purpose four 1/3 cups
    Vegetable oil/pork lard 1/3 cups
    Salt 1 1/4 tsp
    White pepper/black pepper 1/2 tsp

    00:42 - After 15 minutes, knead the dough

    I love these pancakes so much.
    Recently I started making my dough the day before, and then cooking the next day. It has improved the elasticity so much.

    Omg I loved these when I was living in China. This video makes me happy but now that I'm gluten intolerant there's no way I can eat this dish again as this can't be made gluten free .

    Does this pancake need a dipping sauce?

      This pancake is usually served without dipping sauce. The pancake is already flavorful because we use quite a bit of scallion.

      soy dipping sauce is better. I usually do 2 tablespoon Kikkoman soy sauce 1 tablespoon water 2 tablespoon sugar and 1 tablespoon vinegar or lime juice or both and some chili flakes for some heat. Adjust the tartness and sweetness to your liking.
