The problem with tapping into the interior light is its on a timer (i think 20.mins) it then cuts the power to it. I have wired mine into the reverse light

Still watching through your vids and the incredible job you did with your van in the UK. I returned about 10yrs ago. Have you considered building campers for rentals/surfers/tourists? If I had the money I'd go down the mini van life route for surfers travelling the coast.
