CHICKEN PICCATA INGREDIENTS:
4 Thinly Pounded Chicken Breast
3 Tbsp of Unsalted Butter
1-1/2 Tbsp of Olive Oil
2/3 cups of All Purpose Flour
1 tsp of Italian Seasoning
1 tsp of Granulated Garlic
Salt and Pepper, to taste
1 Shallot, minced
1/3 cup of Dry White Wine
1 cup of Chicken Stock
Juice of 1/2 of a Lemon (or whole if the lemon isn't as juicy)
3 Tbsp of Capers
Fresh Chopped Parsley

There aren't that many recipes one can make Italian style, revamping is applied in so many areas, it's making me nauseous. Look at movies, TV Series, cartoons, even the celebrities "revamp" what has already been done, listen to the music on the radio, everything seems to lack originality and it's somehow the same old soup overly reheated...
Hi Laura! My mom and I used to make your Chicken Piccata all the time ever since my dad (a French cuisine chef*) passed in 2014. This recipe (which has been a staple of mine since your first CP video) became "our" recipe among others whenever I visited her because it was so quick and delicious. Ever since she passed 6 months ago (on Christmas Eve), I haven't made it but I think it' time again. Thank you for reminding me!
*The French technique you did is called a "beurre maniér". Something my dad also taught me. :)

Beurre Manié. I use it quite a bit in soups and stews. I usually don't add shallots to my Piccata, I'm going to try it, it looks wonderful.

Love 💗 your video of Chicken Piccata. I had to look for a good recipe. Ina Garten uses Italian breadcrumbs and Giada leaves out white wine, lemon 🍋 slices, parsley and hers is blaaaand. Yours is great 👍 😍

Every recipe that I tried from Laura in the kitchen they are divine masterpiece and every word she utter it is sop true, the last one I tried is her chicken nuggets, they are a die for and something you want to eat everyday, but I did mine in an air fryer instead of shallow frying.

That looks really nice. Just watching the fond come up from the pan, I swear I could smell it through the screen. I have to be honest, though, when making anything of this style sauce, I like that gravy consistency. I always work a little corn starch slurry in and get that thickness. I love the way it bonds to pasta. Shrimp scampi really blows up when I do that. I will definitely try making this your way though. I could see ending a meal like that with a peaceful nap. Good times.

You know as well as I that Italian food differs depending on the region of Italy. Italians cook what is readily available where they live. I know an Italian friend that puts sliced boiled eggs in her lasagna. That’s how her family taught her, something I would never do.

are you ever right about some establishments doing some kind of a :piccata ala cream -- this is not piccata but I must say that one quick version involves doing the cutlet with half way cooking and taking it out and adding a quick shot of lemon and butter a then put chicken back in for about a couple of minutes-- not as good but a "fast piccata" if you will

Any alcohol including wine evaporates during the cooking, but it gives a better flavor !
You can use more chicken stock in place of the wine.
Can you use any white wine when a recipe calls for it? I never know what to use.
I recommend any dry white wine that you would actually drink on its own. Stay away from sweet dessert wines.
