Many times they keep it like this to give a rustic look, to show that the shop is very old.....if you will find a neat and tidy shop with utmost hygiene, you will not believe it is an old shop.....true fact.....and when you are eating outside home in India, keep hygiene concerns at bay.....if it was served with utmost hygiene, the same Kachori would cost 200 rather than 50.....
We have a very famous 3/4 Star hotel in Rajkot, to dine in its restaurant is considered to be a status symbol. But hygiene is not maintained in it's Kitchen too
