Oh my god the blind baking upside down is genius! The edges always fall down a bit when I use pie weights normally, but this way the crust is supported the whole way up!

So nice to hear! I grew up in the USA were pies are pretty common. But good ones aren’t so much. I grew up with a mother who made pies. So I make them too inspired by her. But it’s always good to see new tips just when you think you knew everything! This is a really great place to get them.

And though we do have pies in a general sense, they're not very common, the most common ones are the salty kind, and they're almost never homemade - most I've ever tasted were from shops, or the frozen type.

I used to always leave things in the over for another 30min even after they turned dry because I was so scared of having an undone pie and didn't see the harm in having it overbacked. I love this! Give people a chance to understand where they may be going wrong. I don't make pies because it is messy/wasteful blind baking with rice (don't have beads), but I LOVE this 2 tray idea. GENIUS!
I want to try this tray idea, but in the past I've always used dried beans. I use the same beans repeatedly and just keep them in a ziploc. They're my pie-beans.
the way that you present information and examples is *chef's kiss*. it's so much more concise than anything I learned in culinary school. in school they don't have time to make every variation and explain the why's of every little variation, make sure everyone in class does everything correct. we all try our best to watch the chef do it and then try ourselves, sometimes it's impossible because of the technicalities, as you know, baking is complex. they'd expect us to pick up what we couldn't practice in school from reading the textbook and trying at home. needless to say it was impossible to fully grasp most concepts and to learn them properly to do them right. my chef in school would just say curse words in French/Italian and throw pans around when we royally screwed up lmao...🤣 anyway 👍 wonderful teachings sir, bravo

Making pie is so much fun and delicious. I have been doing it for about a year now, and I have learned what not to do, and I'm always on the hunt for more tips. I like to use metal pans over glass. I have better results especially when it comes to fruit filled pies. This will always be something I need to better myself with. Thanks for the blind bake tip. I can't wait to try it out.

I suck at baking. My first pie was a pumpkin pie from scratch and I didn't know I was supposed to shave it. Also didn't know that I wasn't supposed to use the big pumpkins. I should mention that I did not do any research for the pumpkin pie. I winged It with no recipe. 🤣 The only person who ate it was my sister. She said it tasted good but the texture was weird.

I mean, I’ve always poked holes to allow for steam to escape, but I went a step further and bought a box of pie weights. Lol. They were on sale, so I’m not too broken up over it. Thank you so much! Don't cut the excess pie crust until it's baked. Saw it off with a paring knife or serrated knife. I learned that trick from Thomas keller

Yeah, you can find most of these tips in various cookbooks, but it’s not all consolidated into one book yet.
Some never learn too. I'm no baker but pastries are a lot harder to cook. The learning curve is insane!
