INGREDIENTS:
🔹 Extra virgin olive oil (I used Early Harvest Greek EVOO)
🔹 1 large yellow onion, chopped
🔹 4 garlic cloves, chopped
🔹 1 green bell pepper, chopped
🔹 2 to 3 carrots, peeled and chopped
🔹 1 15-oz can diced tomato
🔹 2 cups water
🔹 1 dry bay leaf
🔹 1 1/2 tsp ground cumin
🔹 1 tsp dry oregano
🔹 1/2 tsp paprika
🔹 Kosher salt and black pepper
🔹 1/2 tsp red pepper flakes, optional
🔹 2 15-oz cans black eyed peas, drained and rinsed
🔹 1 lime or lemon, juice of
🔹 1 cup chopped fresh parsley
I made this dish. It was SO good. I followed her recipe but I made fresh black eyed peas in the crock pot then followed all her instructions. I added a little onion powder garlic powder though. This recipe is a blessing for those of us trying to eat more plant based. This is my second recipe of hers I made she is the truth!
I am single vegan who cannot cook (bottom line), but I can follow directions. This entree gave me the opportunity to impress a few friends for New Year’s 2022. The dish has elevated my confidence and reputation. Very favorable meal that I will definitely repeat.

Just cooked this bean dish. Besides the black eye beans I add pinto and garbanzo beans from fridge that I cooked at home yesterday. It came out delicious and mouth watering. I made this recipe and it was fantastic! The flavors came together so well at the end. You were right about adding the lemon and parsley after it finished cooking - so good! I served it with quinoa and it paired very well. This might be my new favorite instant pot meal - it was seriously that good.
Variations: I used 1 lb dried black eyed peas in an instant pot and pressure cooked for 17 minutes, then + 20 minute natural release. Also added in some celery with the carrot.

Execuse me... Did you soak them in water the night before cooking them or you cooked them directly without soaking ?
@@tukahamadah8547 I think I soaked them overnight first. Beans usually come out better if you soak them first

Came by to say this is delicious! It’s so fresh and yummy. Most soups/stews seem to need their overnight time to taste really good, but this recipe is great immediately.
I used half black eyed peas and half fresh chickpeas. Used dried parsley instead of fresh. NOM! Thanks for the great and HEALTHY recipe ❤

Tell me more about the black eyed peas. Were they pre cooked, or soaked & raw? I always use dried beans - the soak water is ideal for feeding pot plants - & wonder if I need to cook them prior to adding to the veg?

I am originally from Egypt living in The Netherlands, but in all my life I didn't see such a way of cooking black-eyed beans as you cook.
I have 2 questions for you please.
(1) I don't buy ready-cooked Black eye beans, I buy them raw then I boiled them, So what is the correct way for boiling them.
(2) Normally I eat them with Rice, do you have nice Greek cooking for Rice.
I was in Greece several times and The Greek cuisine is very healthy because it's based on olive Oil as you said.
If you have a link for how to prepare Original Greek Salad Please send it to me.
By the way, I am not eating any kind of meats or Eggs.
I love Fish and one the best fish and seafood dishes I was eating in Greece and in Egypt as well, but now I am living in the Netherlands and I am more connected to Europe

Yes that was corriander ...i go shopping everyweek and corriander is my favt ..she mixed up between corriander and parsley
Nope definitely parsley. I used flat leaf Italian parsley. Coriander (also known as cilantro) has a much different flavor

nice recipe. But the way you hold the knife will get yourself cut. Please look at how professional chef hold their knife
