- We've been back in Morocco a week now and this is our first time trying traditional M'smen; a Moroccan type of fried flat bread commonly served for breakfast.
We were just driving past and saw a busy breakfast restaurant on the roadside in Mohammedia. And we are very glad we stopped!!

Hi there, the herb is another complement of Moroccan tea, instead of the traditional mint we use that herb called in moroccan "esh-hiba". In anglo-saxon countries it is called Wormwood or Absinthe. The absinthe is also the base of a popular French green alcoholic beverage. By the way, you are a lovely family and you have the most appreciated attitudes for stilling Moroccans’ hearts: humbleness, respect to others and a big smile.

that was absinthe plant you can add inside the teapot instead of mint or together with mint . generally used during cold winter time

That’s called shiba ,you’re supposed to add it to tea pot ,jut the herb to the water for added flavor but mostly for the benefit it gives to your body (it’s supposed to warm you up ) when it’s cold out,that’s why it’s used only in winter time,very rare in summer time.

Hello, this Shiba herb is used in tea in the winter. It is useful. You can empty the water in the cup and use the herb inside the refrigerator. It is very wonderful.

The herb is called Shiba, and it is an herb that grows in the winter. Moroccans use it instead of mint... because the quality of mint is affected by cold weather, so Moroccans replace it with this herb. As for the method of using it, it is placed in hot water until it loses a little of its strength, because if you put it directly in the teapot, it will be tea with an undesirable and strong taste... That is why you had to put it either in the teapot with the sugar and mix the tea... or put it in a cup or two, depending. Your wish... Personally, I put it in the cup and pour tea over it, of course, after putting it in hot water for a minute at most.
Moroccan Shiba (absinthe), with a delicate fragrant taste is my favorite herb with tea especially during cold days

That herbe is called "cheiba" in arabic ( absinthe in french and green fairy or wormwood plant in english). It is used instead of mint in winter but just a small amount.
And btw, that wormwood plant is put in hot water so it loses some of its bitterness before you actually use it. And how you do it is just grab alittle and add it to your cup. Instead of adding the whole bunch to the pot. Wormwood is a really good antimicrobial and also good for your guts.

wormwood in Morocco is called shība (الشيبة), it is used as a complement or substitute for mint in Moroccan tea. Wormwood was traditionally relatively common as a bittering spice.

It's better to wash it first with hot water for a while to remove dust and bitterness before leave it with the tea to spread aroma It gives nice taste I like it on winter time 😊

That Herb is called " Esh-iba" the pronunciation depends on the region and it is widely used in Winter , in contrast to Mint tea that is considered a summer or cool weather drink , Also if you guys manage to go to the Beni-Melal region, that I highly recommend especially "Ouzoud waterfalls" & "Tagzirt " the nature there is amazing and different than the north , Anw, people there use another Herb called " Timersad " or " Temejiit" is called in Darija , I believe the closest translation of that is " Mystic mint " found only in the Maghreb region, m they use it not only with Tea but for foods like " Hercha " and it is so refreshing , make sure you try it .
