How to Clean an Espresso Machine | Perfect Coffee

    My name is Mike Jones, and I'm a barista at Third Rail Coffee right by Washington Square Park in New York City. I'm going to teach you some basic coffee-making skills.
    I'm going to show you how to clean an espresso machine. Now, the basic thing that you do is a process called "backflushing". Now what this is, is instead of using this basket here in the portafilter which has holes in the bottom for the espresso to go through, you use a blank one right here which is solid on the base. You can pop it out and see. And so what you do is you put it in the machine, same as if you were extracting espresso, but pull shots at 5 seconds intervals. And I'll show you that a little bit more. First thing you want to do is scrub the screen. This is a pretty standard espresso brush. And as you're running some water, you can just scrub the base. Now if you're doing this at the end of the night at a busy cafe, you would actually take the screen of. But to give it a good clean, this is sufficient. Put the portafilter in. Ran it for 5 seconds and then stopped. And then dump out the dirty water. And then you're going to repeat that between 5 and 10 times. So assuming we've done that, the final step is to run the water and then wiggle the portafilter around. This cleans out around the edges up in the grouphead. So at the end of the night, you're going to want to do that same backflushing process but this time with chemicals. The common ones are from Urnex. And they're either called Cafiza, Full Circle, and there's a whole range of them but pretty much every coffee shop is using the chemical from that company. So you just use a small amount about the size of a dime, and place it right in that basket there. And then you just go through that process of running 5 seconds intervals and then at the end wiggling it around. You might want to give this one a more thorough wipe with the rag at the end so there's no excess chemicals. And that's the basics of cleaning the espresso machine.

    Everyone, listen closely to what he says briefly at 1:18. He mentions if this is being done at the end of the night that the dispersion screen must be removed. This is a very important step! Cleaning with the screen removed allows the brush to clean the grouphead's tiny water jets/holes, and it also assures the screw doesn't become seized. Also note, when re-attaching the screen the screw should be only finger-tight or less. In other words do not over tighten the screw.

    This is my 2nd Keurig coffee maker of this model. czcams.com/users/postUgkxBrV-RbF5Nk0Rlt9i15aao-YMzqzTG8Vf The first worked fine for more than 2 years, and I could still get a decent cup of coffee out of it if I fiddled with it when I decided to replace it. The problem I had with my first unit was this: When attempting to brew a cup of coffee, the unit would either keep brewing until the coffee was undrinkable or it would not run long enough and the coffee produced was way too strong. I cleaned the unit as best I could but it did not help. So in the end it was just too much trouble to get a good cup of coffee out of it, so I decided to replace it with a new one, which has been working great since I unpacked it.

    Hi, how do I clean the inside system, other than the group head. I know that we’re supposed to add the cleaning solution to the water in the tank and open the pump for 25 second intervals. I’m not sure what and how much solution I need to add.

    More baristas should run clear water through the open group before every shot. Scalded grounds from previous shots, which adhere to an unrinsed filter screen, are the main reason why cafe espresso often tastes terribly burned and bitter. The other common defect is sour shots, probably caused by coarse grinds and underheated water.

    hi I have a question,the place I'm working at has very little crowds so we usually just use one side of the machine. so example I'm only using the left side the whole day so during closing do I still need to clean the right side even though I didn't use it ?

    Gotta clean my Ariete espresso machine.Lots of build-up of that crap that comes in our water.Need the right equipment and directions how.The simple,budget machine just need a flush of vinegar or lemon juice,then a good flushing of water.This machine is a EXPENSIVE version obviously but my machine is the same type,just a $2000 cheaper.LOL

      You tell me, does hot water clean better than cold water? What temperature water does a dishwasher use? Clothes Washing machine? (hint even on cold a clothes washer still adds in some warm water, only machines with a 'tap cold' setting use only cold water) Also you clean after you use the machine, which means the water will be hot, waiting until it's all dry and baked on and cold defeats the purpose.

      the buildings drain/sewer pipes? There's no drip tray that collects water that you then need to dump on commercial machines.

      That’s literally what you do at every cafe and it takes maybe 5 minutes max to do four group heads so you’re lazy as fuck.
