In Assam , we grate the raw mangoes after peeling it... And add chopped raw chillies , salt, (I prefer black salt) and kolakhar, which is a traditional Assamese ingredient (it's like an extract of alkaline obtained from the ashes of burnt dried banana peel)...
And we mix all the ingredients together and eat it... It's really sour but the kolakhar and salt balances the flavour.
We loveeeeee it and crave for more❤️... But foreigners can find it weird, as it's really sour.
