a small tip :- keep the tracking box a little smaller .. so it will take less time if you doing some long clip edit :)

to fade up you use the effect Fade Up Words(no plugins needed) and for fade away you either fade out the opacity, or fade out slow

have you made sure the text layer is above your clip, the colour is set to a visible one (you can change it in character) it sounds silly but have you typed in your text? also to click on a text layer after creating the layer, change back to the pointer in the tool bar and it should let you double click on it
