One Pot Meals Month, Homemade Beef Stew is what's for dinner tonight

- Stephanie and I have designated January One Pot Meals Month. And keeping with that theme I have prepared a delicious pot of homemade beef stew. Full of beef, carrots, and potatoes, this is a hearty meal. Make extra and freeze it for another dinner. Or share with a friend or neighbor like we did. Recipe below:

Ingredients:
2 Tbsp oil
1 lb cubed chuck or stew meat
salt & pepper to taste
2 Tbsp flour
1 med onion, chopped
1 lb peeled carrots, peeled and chopped
6 medium potatoes, peeled and cut in large chunks
1 Tbsp tomato paste
1/2 tsp roasted garlic base
1/2 tsp roasted beef base
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
1 28 oz can crushed tomatoes
4-5 cups of beef broth, or more if needed
Directions:
Add oil to a hot, large pot. Salt and pepper beef, then coat with flour. Add to the hot oil in batches. Don't overcrowd. When browned, remove to a plate and set aside. In the meantime, chop onions, carrots, and potatoes. Add onions and carrots to the pot. Cook until onions start to get tender. Add tomato paste and stir for a minute. Add remaining seasonings. Pour in tomatoes. Stir well. Add potatoes and add meat back to the pot. Cover with broth. Cover and simmer for one hour. Add broth as needed to keep stew from getting too thick. - Jak na to + styl

Yes, cold here in Arkansas also. My cold water side of the faucet in the kitchen froze up during the day, and I was using it every now and then. I am leaving it trickling constantly now. Can’t turn it off completely.

Hi Karen!! I love watching your videos and noticed that Pop always gets his own spoon or fork. I am a Nurse Practitioner and it’s my job to notice everything, ha ha! I noticed you had a spoon with a blue handle and handed the bowl to Paul and then the video was edited and your spoon was resting on the chopping block and he had a silver handled spoon. I am the same way with my hubby of almost 44 years!! 💜💜💜

Now we’re talking. I absolutely love beef stew. What better to have on a cold winter day. I’m with you, I love a good chuck roast. I made one yesterday . I’m having leftover soup tonight and roast tomorrow night. I will have to fix your stew weekend after next.. got this coming weekend’s meals already planned.. Some of the best smells that come out of my kitchen start with the smell of onion garlic & beef (or chicken broth), salt & peeper & garlic powder. The only other addition I would make Mrs. Karen would be a sprinkling of crushed red pepper flakes. Go easy, taste, you might want to add more. Just be careful, add just to your taste.

Looks so good! I made ham and potato soup for dinner because soup is the best when it's this cold Last night we went out for dinner to celebrate our son's birthday, and one of his friends told us that he heard on the news just then that it was two degrees colder here than the South Pole. We were out in minus 25 windchill weather, and so we knew to start the car a half hour early, and be very careful. Everyone promised to go straight home (I checked later, and they kept their promise). So thankful that we were all safe, and that we got to celebrate Brandon's birthday and have a wonderful time! We have the cold and we might see flurries or wintry mix but I'm hoping we will be spared. But, having said that....beef stew would be delicious. I think I'll make a chuck roast here pretty soon. Family loves them. Aren't you sweet to think of your neighbors....good thing about beef stew is it's even better when reheated I think. A good sear is so important for extra flavor. Thanks Karen for another great supper idea. I've got spaghetti sauce cooking for tonight....but you can believe beef stew or chuck roast will be on the menu into the week. 🥰

I’ve never made it with tomatoes,my mom and Aunties made it like a beef gravy I guess you can call it that,Lol Then with overs they’ll make homemade pot pies . So going to try it your way. Delicious recipe.
Ŵhen we make beef stew we use Heinz brown gravy and add 2 Tbsp. flour and whisk it into the gravy to make it taste homemade.

Stay in and snuggly warm. We're not used to this in Alabama. Roads were iced, schools and some businesses closed. 😉 But my honey-do list is getting taken care of.

Happy MLK Jr. Day, Karen! The new crockpot was brought into my house 5 days ago. On Saturday, it slowly cooked the stew full of steaks, potatoes and carrots. I ate 2 personal servings on Saturday night. I ate saltine crackers. I drank lemonade. I got filled up. The crockpots can cook mac-&-cheese, ribs, chicken noodle soup, chili and more. Last night, I ate baked chicken, canned corn, canned collard greens and rolls. I drank the mixture of orangeade and Hawaiian Punch. Red and orange can blend in the color wheel.
Happy MLK Day to you as well. The crockpot is a great cooking vessel. Isn't beef stew delicious in it. Lots of great meals to come I'm sure. Enjoy it! 😋❤️
