I put a "born on" date on my bottles (the date yeast was pitched) and a "bottled on" date.
I was just going to ask that question on when you do the 1 year from, start or bottle, but you answered it. LOL. Thanks so much and keep up with the great videos

I will be making this starting this weekend when our heat wave ends and I have a chance to buy some red star classique. I have found a source for acai puree 48 oz on Amazon so we will see how that works. I usually go 2.5 gallons and wine bottle it all. Thanks!

Acai is one of those flavors that I really want to include in a few of my brews because I used to live in Brazil. I don't know if I want to use the Smoothie blend though. I think I'm going to try to find some dried acai on Amazon or maybe some acai extract
Derica, this is how I feel about the Fruit Cake Mead! Now, I have to try Acia Mead! The hardest part of mead is waiting the full year to taste the glory! No one is getting fruit cake for holiday, it's gone......
If you were thinking about adding cinnamon, or maybe some orange zest with the flavors you are describing. Try using it as a mulled wine, and go from there.

I made a chocolate blueberry acai mead a couple years ago, trying to replicate the taste of those Brookside candies. Honey, Acai powder, blueberry juice, frozen blueberries, cacao nibs. It really nailed the flavor of the candies, even though it was a bit dryer than I usually make.

@@CitySteadingBrews I ended up with four bottles, and they were gone in two months no matter how I tried to hoard it. My friends wiped me out! I'll be making another batch soon, it was definitely a hit.
So I have gotten into a habit of when I make mead's and wines that fall into that lower scale of 1 through 4, that I have used them for making vinegar's.

Since some brews take longer than others, I just label them with the start date. I don’t want to penalize a brew that takes 5 months in comparison to one that only takes a month.

I have a question that is kind of related.....I grow goji berries, can I use them fresh to make mead? Would I treat them like any other fresh fruit?

I honestly don't know. We used dried. I have never seen a fresh one!

@@CitySteadingBrews they are kind of sprawling and bushy, very thorny, and rather invasive, at least in Alberta so I am told, so I might as well use them to make something yummy!

I generally do not, no. Not sure if it would improve or not. Then again, I don't do it with wine either!
I have made a Klingon blood wine with acai added in conditioning. It's F'ing awesome.

Ok, I am investigating how to force carbonate 1 gallons brews and then transfer it to bottles. Since almost every one recommend that you chill the mead before and during carbonation, would there be any impact to flavors if I allow the carbonated brew to warm and store at room temp, ~72 deg?

Question. I put, by mistake, double the quantity of sugar for my dates wine. What would happen? Using EC -1118.
Depends on the specific gravity, temp, etc. May just make more alcohol, could cause a stall.

Today I made my first coffeemead really disgusting, maybe because its new, what do you think of this recipe ? 1kg honey 3g jeastnutrient, 3,5 l water, 500ml coldbrew 30g, 1,062, bakingyeast. Was it bad to add the Coffee in primary ?
We have two different coffeemels on the channel. Not sure how yours compares. Seems low og so might not have enough honey character. Or it's young.

Fruit punch IS a terrible way to describe something that is good. Unfortunately, there have been endless disappointing "fruit punch" flavors in products.
I have had some great homemade fruit punch.
