I make large batches of this and freeze portions to have for a few months
Especially in the summer when berries are at their sweetest I do mixed strawberries, raspberries, blackberries and even some blackberries. I squeeze 2 oranges and shave the rind off the skin ( not grated) and add that to the pot for added flavor. I don’t use Maple syrup Or honey- but sometimes I might add a tiny splash of thicker Balsamic syrup to it. Often the fruit is sweet enough not to need additional sweetness.
If doing small batches then you only need a couple of tablespoons. But when I make a large batch I use more chia seeds. The end result always varies because the juice from my berries vary too.
I like it more runny more like a thick compote because I add it over yogurt (or for my family - on strawberry ice cream - amazing!). I leave the the cooked softened orange rind in it to infuse more of the flavor and you can eat it later - or just remove and throw out when ready to serve.
Very versatile and a super yummy treat.

With that said, real jam lasts MUCH longer. With chia jam, you’re cheating the thickening process while retaining high moisture content, which will allow mold to grow faster. Chia jam is to be used soon after making, while normal homemade jam has lasted me months without a sign of spoilage

I use a stainless steel straw, 1/2" diameter, push from the bottom to extricate the whole stem. Be sure to cut off the leaves to save all that strawberry. works G R E A T. Got the straw on etsy from Mulled Mind but they closed the store. Hopefully you can find the 1/2" SS straw elsewhere.

Suggestion; blend it, and add a pinch of Xanthan Gum found in the bakery aisle. It’s a commercial ingredient that’s used as a general thickener. You’re not removing any water when doing this, so I assume it will go moldy at a similar rate to plain strawberries

I like the fact that the jam is easy and sugar free. I don't like how you prep your strawberries. You waste a lot of the berry by cutting the top off. Just insert a straw from the bottom and the top will pop off. Then cut as you wish. Waste not want not!
