    I can attest to the amazing abilities of the pressure cooker, both in cooking times and in driving flavors *into* foods instead of boiling them out. And pot roast is one of my life-long favorites. My mother did it in her pressure cooker from my earliest memories (and I'm talking 1950), and it was one of those meals that had you climbing the walls waiting for it to be on the table and on your plate. She taught me her recipe.
    When I moved off campus in college in the 60s, as a house warming present she gave me a brand new MirroMatic pressure cooker. I still have it, and I use it *often*, and it has mastered the art of pot roast. LOL
    Your recipe isn't all that far removed from the one she taught me. I do throw in some sacrificial celery, garlic, and an onion at the start, which will literally disintegrate during cooking and become part of the gravy later. I take it up to 15 PSI for 45 minutes, then open it and throw in the potatoes and carrots (and sometimes more onion and celery), then back to pressure for another 15 minutes, and it's done. I don't thicken the gravy until after it's done and everything is out of the pot, thinking that it's better working with the pure cooking liquids during cooking, but in real life, it probably doesn't make any difference at all.
    I'm happy to see modern appliances like this Power Pressure Cooker, simplifying things, and removing some of the mystique and fears of the unknown. I've always felt that the pressure cooker is over-feared and under-appreciated.

    Got a 10 qt ppxl in October. Having a blast with it. Cans well. Pressure for canning is 12psi. The rest of the settings are about 7.5 psi. Perfect. Try hard boiling eggs...it's a riot. My husband gets to have drilled eggs more often.
    You cook them at the rice settin. The shells early fly off. And I'm using fresh eggs from chicks I know personally. I LOVE IT !

    Hint, hint, hint, over the years I have learned to set the machine to sauté while I’m putting everything in the cooker. It comes up to pressure almost immediately when you put the lid on. Food is wonderful! I use mine almost daily. Another benefit is the savings in power. Many people in our county have pay as you go power. My friend says it doubles her power usage for a 24 hour period if she uses her electric oven for one hour.Everyone needs a pressure cooker! Great looking meal.

    I purchased the 6 quart power pressure cooker yesterday at a local hardware store, and made 2 bbq chickens in it, then added my potatoes later,,,omg the chicken literally fell apart in the pot, but wow the flavour was awesome., I'm going to love using my cooker lol,, the only disappointment was that the cook book was in some other language lol. Also some sauce burned to the bottom, I'm still soaking the pot lol. Glad i purchased this cooker.,,WOOHOO

    • @DesertRidgeline
      @DesertRidgeline Před 7 lety

      My first attempt cooking a penne pasta according to the recipe ended up with about 1/2 inch of burnt pasta on the bottom of the supposed "non-stick" pot. Took me nearly a week of soaking and a lot of scrubbing with a nylon brush to get it clean again.
      By the way, it was the recipes fault, as it instructed 2 lbs of pasta instead of 2 cups, otherwise this thing has worked great with stews, soups, slowcooker recipes etc.

    This is a perfect recipe! I've made it twice now. The first time I tried with the cornstarch slurry, and it was really good, with a thicker sauce, however as it cooled, the sauce turned to jelly, and even when reheating as leftover it remained jelly.

    I like your demonstration....even when you spilled a bit of grease on the floor and wiped it up with paper toweling and the dog came by to clean it up....LOL....It's like at my house. I use an 8 qt Pressure Cooker....it is large....enough for four people and then some...great size for meals that require foods such as large roasts, hams, family sized stews or seafood combinations....It is large enough for a 5 lb chicken....plus some veggies...I use the trivet for extra veggies, but lacking that, people can wrap the veggies in aluminum foil and place it on top of the roast. .I can't say I use the I.P every day as there are only 3 people in our household....but we do use it about twice a week and it is handy because all foods can be made in one container, even the browning and gravy making and usually the vegetable sides. Good demonstration..love the use of your veggies....simple and what is needed...A hint: do not use too much salt as your other liquids and seasonings will have plenty of salt in it....you don''t want to overdue the salt.. Two suggestions: 1. Next time do a slow release, it will prevent the meat from getting too tough..
    2. Set the meat time for 5-10 minutes less, then add the remaining veggies for the remaining cooking time. This will save you overall cooking time.

I sure miss that one.. when the rubber gasket went bad I couldn't find one to replace it anywhere

      You can do chicken the same way as beef. Sear the chicken first to get that great browning that you want. I just did another recipe from another video and had a roast beef dinner in 11/2 hrs. because my roast was a larger roast, and a different cut. I liked this video because I learned about the steamer accessory, however the other video showed how to just put everything in together. The broth to make gravy and meal was very tasty.

    Even though this was old video, it helped out a bunch. Thanks....maybe this will help you as well. Whenever your taking lids of of pots, don't turn them down unless you like a counter full of gravy, water and other sauces. Again thanks for the tips.
