Conduction/Convection Cooking
This is not roast fish This is a mixture of Conduction and Convection Cooking
This fish is cooked mainly by means of heat transfer from the foil to the fish and the steam that build up inside of the folded seal foil paper so it's more of a steaming process in a vacuum.
To roast the food has to be directly exposed to naked fire/flame be it high or low fire/flame
