Tasting my Russian Imperial Stout 2019 - Best Beer to Date!

  • In this video I taste the Russian Imperial Stout we brewed all the way back in May! Its been aging in secondary for many months and this led to what is easily the best beer I've ever made. It absolutely blows my last RIS out of the water and is a pleasure to drink.

    The recipe for 4 gallons is below, your efficiency may vary:
    "Heart of Darkness"
    16 lb UK Pale 2-Row
    1.5 lb Black Barley
    .75 lb Chocolate Malt
    .75 lb Special B
    .5 lb Crystal 120
    .5 lb Caramunich
    Single Infusion Mash at 151 F for 90+ min
    Water (ppm) - Ca: 66, Mg: 12, Na: 65, SO4: 77, Cl: 118, HCO3: 81
    60 minute boil:
    60 min - 1.25 oz Northern Brewer (9.9% AA)
    30 min - 0.75 oz Northern Brewer (9.9% AA)
    15 min - 0.5 oz Northern Brewer (9.9% AA)
    0.75 oz East Kent Goldings (5.6% AA)
    Add chiller, yeast nutrient
    5 min - 0.75 oz East Kent Goldings (5.6% AA)
    OG: 1.100
    Yeast: 2 x rehydrated US-05 dry ale yeast
    Age in secondary fermenters for 4-6 months before drinking

    Thanks again. I've brewed 2.5 gallons of Brewferm Sinister Stout. It's been conditioning in bottles in the basement for 2 weeks now. I can't wait to taste it!

    My favourite style of beer! Looks really good, too. Here in the UK you’d be paying £5 ($7) for a single can of that in the supermarkets. I’ve been home brewing for a couple of years now but am still brewing kits. Of all the videos I have watched on all-grain brewing, yours tempts me most to try it, especially as you have included a list of all the equipment you use. Thanks for posting!

    Awesome! I too have tried a few experiments of aging in bottles vs bulk aging. Every time I liked the bulk aged beer better. I now regularly do it with my BDSA and barleywine/ole ales. It just seems to round them out more for whatever reason. I'm sure there is some studies some where haha. Great stuff man! I want to do an old school 1800s RIS with tons of bittering hops and let it bulk age a long time. I haven't brewed a stout in years.
    And Happy Birthday! Great way to celebrate with a nice strong brew!
    I could help but think of Ron Burgundy when you were talking about where to drink it haha. In a library with many leather bound books and mahogany everywhere.

      Thanks! That sounds like an awesome experiment! I definitely feel like theres a lot more roundness from the bulk aged batches. Gonna do a barleywine for this next year I think.

    The Russian imperial stout does sound really good the way you explain the flavors the only thing that scares me is the 81 IBU ratings. I do love stouts and porters and the strongest stouts I've ever had was Guinness extra Stout and HighTower Brewing Coffee Stout and I absolutely love them but I don't think they have an IBU rating nearly that high. I tried a Black IPA that had a IBU of 75 and I spit it right out. Granted I don't know if it was the IBUs or the fact the IPA tasted like a pine tree(also gross) where I prefer grapefruit or citrus IPAs and not Pine-Sol. I will say the the color of the Imperial Stout and the light mocha colored foamy head look absolutely amazing. I just wonder if the flavors in the Imperial Stout help cover up the 81 IBU rating. Great Job on the Brew.

    Looks incredible !! What volume of carbonation do you estimate? I’ll try to stay below you number seeing that it might be too much. I don’t think mine will be as black because the krausen was more of a Guinness head colour, we’ll see !

      Possibly! That does give off a raisin like flavor in the belgian dark strong ales I've done.
