I had a recipe and I remember these are not super difficult, but I could not get them to turn out correctly. I tried what I remember, but they still flopped. I tried recipes I have, all but the double boiler. In the oven now! Nextt time, your way completely-like as soon as I get it all cleaned up. Love your approach!

I’ve only tried making macarons twice in my life. First time it was a success. Last time I completely forgot to sift the almond meal and sugar and got delicious but super ugly like marshmallowy sandwich cookies 😂😂 I can’t wait to try this method!!

I haven’t tried with meal but you can try! Some almond meal is made with the skins of the almonds too, but almond flour is only the peeled almonds. It’s ideal to only use the peeled almonds!
Yes so I’d make the cookies and frost them too! They get really nice and chewy overnight. Airtight on the counter is perfect, but you can also do fridge! Whatever works :)

The humidity can lead to a bit more cracking and affect the puffiness of your shell!
