There’s a part of this story that is left out, when Dee initially refused the Angel turned into a Demon and demanded.
And what was the deciding factor was the Magic Squares. The Angel Language is Math, and by revealing incredibly complex magic squares Dee was convinced. Dee believe Kelly was not capable of inventing all of what “the Angels” shared, including what’s known as “the Angel Language” system and Magic Squares.
So the Angels gave him the “skeleton” of a New Magic Square, and then asked for Dee & Kelly to switch. Dee refuses accusing Kelly, and the Angel said he would prove Kelly was not making it up by providing the Magic Square Key - which “they” did - and this is what sealed the deal.

Other than the Library of Alexandria, Dee’s library probably contained many of history’s secrets. He was certainly in the know concerning the European courts of his day.
