    Filling
    200g chocolate callets
    Souffle Crust
    65g unsalted butter
    30g icing sugar
    65g low protein flour
    60g milk

    Hi, great video as always! I'm going to try that. How does your stiff starter compares to a pasta madre? Could you use your stiff starter to make panettone or a pasta madre to makr theses buns? Thanks

      I have seen pasta madre made non sour sweet bread, it’s similar request as sweet stiff stater. But using sss to make pane, I believe the results will probably be slightly vary due to the acidity of the pm is different.

      Just cake flour. 7-8% protein. Alternatively use all purpose flour ok too

      面团就不能发酵了。除非你用商酵食谱。

      可以的,但还是要调整水分。去除酵种后,面团水分需增加些些。
