How to make the PERFECT scone

    Fan Oven 180 c - 356 f
    Cook time - 18 minutes
    Makes 10 - 12
    Recipe
    500g flour
    15g baking powder
    Pinch salt
    30g sugar
    100g butter “frozen”
    2 eggs
    200 ml buttermilk
    150g raisins “mix dry fruit”
    Egg wash - 1 egg yolk with a pinch of salt & pinch of sugar
    American
    4 cup flour
    3 tsp baking powder
    Pinch of salt
    1/3 cup & 1 tbsp sugar
    100g butter
    2 eggs
    3/4 cup butter milk
    1 cup raisins “mixed dry fruit”
    - sieve flour & baking powder into large bowl
    - add 100g butter & mix
    - add salt & sugar & mix
    - add fruit
    - in a jug mix 2 eggs with buttermilk
    - make a well in the centre of your dry mix & add butter milk and mix
    - put onto floured surface and knead until smooth
    - roll out to 3cm tick and cut out scones
    - put onto floured baking tray and brush with egg wash
    - place in fridge for 15 - 20 minutes while oven pre heats to 180 c | 356 f
    - baked for 18 minutes
    - leave to cool for 30 mins
    - ready to serve

    The fruit scones were first made in the year 1500 in Scotland

      I’me from Wales and England - I’ve never seen anyone out the lid back on the scone after putting on the cream and jam - is that an Irish thing?

      @@carolynclitheroe3588 I am Irish and cooked for money before I retired so I have made an inestimable amount of scones,fruit and plain. There is no Irish way of scone management as far as I know and people as a rule don't consider scone etiquette to be an importance. Myself? Marmalade and a smearing of cashel blue cheese.

    Nice recipe, my aunt always emphasised to not over-mix the dough and to use cream rather than milk but I see here you are using buttermilk so will try it your way for a change! Thank you for sharing.

      There is no difference in Irish scones or any other, they are all the same .Stork margarine makes just as nice as scone. The glaze does make a difference

    I make cheater scones...shape the dough into a square and cut into 8 triangle pieces then separate. ✨

      You don’t have to put them in the fridge you can cook them straight away, i put them in the fridge because I find that they don’t spread out as much while cooking and give a better result.

    Could that recipe work with pieces of chocolate instead of fruits?
    Also if I use frozen fruits should I let them thaw before putting them in or can I use them straight out of the freezer? (stuff like blueberries or raspberries, maybe cherries? 🤔)

      hi and thank you for watching, yes you can use chocolate, also you could use the berries for them freezer but i would recommend thawing them first so you could drain off any excess water they might have from the freezer

      lol- fridge. That’s what I get for typing before coffee. After watching many scone videos this morning I believe my dough was too wet too. I have been using Paul Hollywood’s recipe and it is quite wet. It is a different texture from what a Missouri baker is used to, we tend to think “biscuits “ and the dough is quite dry. I really want to learn to make authentic scones!

      My goodness! Delicious!! I had to try them straight away so I made a batch today. Used 3/4 oats flour and 1/4 rice flour (the neutral gluten free flour mix I use the most) and the rest is like you did. They turned out the right combination of soft and a bit crumbly. Had them with cream and strawberry jam. Absolutely de.li.cious :) Thank you!

    I’ve seen scones without eggs. What’s the texture difference between scones made with and without eggs? Please and thank you 🙏

      Eggs are a binding agent, so it’s all about personal preference really, some people might not like the taste with eggs, it’s all about getting the binding right so there shouldn’t be much difference in the texture. I personally find this the best recipe to get great results in your scones, but it’s all about personal preference.

      Oh sorry ok I get you now, clotted cream will take you a total 24 hours, use double cream and bake it for 12 hours at 80 c , then let it cool and cover it, then refrigerate for another 12 hours, hopefully that will work out for you 🤘🏼😎

      Fan Oven 180 c - 356 f
      Cook time - 18 minutes
      Makes 10 - 12
      Recipe
      500g flour
      15g baking powder
      Pinch salt
      30g sugar
      100g butter “frozen”
      2 eggs
      200 ml buttermilk
      150g raisins “mix dry fruit”
      Egg wash - 1 egg yolk with a pinch of salt & pinch of sugar
      American
      4 cup flour
      3 tsp baking powder
      Pinch of salt
      1/3 cup & 1 tbsp sugar
      100g butter
      2 eggs
      3/4 cup butter milk
      1 cup raisins “mixed dry fruit”
      - sieve flour & baking powder into large bowl
      - add 100g butter & mix
      - add salt & sugar & mix
      - add fruit
      - in a jug mix 2 eggs with buttermilk
      - make a well in the centre of your dry mix & add butter milk and mix
      - put onto floured surface and knead until smooth
      - roll out to 3cm tick and cut out scones
      - put onto floured baking tray and brush with egg wash
      - place in fridge for 15 - 20 minutes while oven pre heats to 180 c | 356 f
      - baked for 18 minutes
      - leave to cool for 30 mins
      - ready to serve

    please specify that that is the Celsius temperature. people who don't speak English as their first language don't always distinguish between a UK accent, and a US accent,

    You say buttermilk. Here in the States buttermilk is a sour(fremented) milk. Is this what you mean?

    I will try this but only one roll-out and a knife to cut in less than prefect squares.
    Hate washing cutters; I"ll call mine "rustic".

      Sorry. No person judgment involved. Just remarking on appearance that might be off-putting to potential subscribers. Humans survived, and still do, by first judging appearances, deciding if approaching people/animals are friendly or dangerous. Scones look great but there again, just looking at the appearance.@@RobertKelly-simplecooking

      For sure I was way too rude and blunt. My sincere apologies. You are working. You have a youtube channel. Good for you. My friends encourage me to have a youtube channel but I can never get organized or focus. So: as the advice goes: compliment, criticism, compliment. Your instructions and voice were clear. That is good. There seems to be a nervous feeling with your back and forth movement that can be very distracting especially for people who have a hard time focusing.
