How to make simple 🍯Honey Whole Wheat 🌾 Sourdough Sandwich Bread

  • Honey Whole Wheat Sourdough Sandwich Bread
    Yeild: 2 loaves
    Bake time: 3 hours total
    Ingredients:
    4 1/2 teaspoons active dry yeast (14 grams)
    4 tablespoon honey (84 grams)
    8 tablespons butter, softened (114 grams)
    1 TBSP salt (16 grams)
    2 cup sourdough discard (570 grams)
    2 cups warm water (472 grams)
    4 cups bread flour (480 grams)
    4 cups whole wheat flour (452 grams)
    Instructions:
    1. Whisk together warm water (not more than 100°F), honey, and yeast. Allow it to bloom for about 5 minutes. The mixture should get nice and bubbly.
    2. Add sourdough discard and butter and salt to the bowl with the yeast. Gently stir.
    3. To a large bowl add whole wheat flour. Make a well in the centre and add the yeast mixture. Mix with until combined. Slowly add the bread flour. Stir until you have about one cup of bread flour remaining and then turn out onto a lightly floured surface.
    4. Kneed in the last cup of bread flour this will be for about 10 minutes.
    5. Place the dough in a greased bowl with damp tea towel covering. Let the dough rise until doubled in size (about one hour).
    6. Grease a two 5.5 x 9 loaf pans. Cut dough in half. Cut each half in half again and you will have four equal sections. Roll into ball shapes. Place two balls in each 5.5 x 9 pan. Cover with a damp tea towel and let rise until doubled in size for 45 min to 1 hour.
    7. Bake at 375°F for 35 to 40 minutes in pre heated oven.
    8. Wait until bread is cooled until slicing (if you have willpower!)
