after all these reviews over the years; dave should know to arrive early, while the pizza is still cooking and save it from steaming in the box. also, let the pizza cool down a bit so the flavors come together. the greatest pizza reviewer in the world, does not know basic pizza rules...

I think they could have been a 7.9 or 8.1 with that.
The problem is if he gives them a 8.1, people expect an 8.1 when they go there. And then get a 7.1 or maybe sometimes a 6.9 and be completely disgusted.

As someone who has actually eaten this pizza multiple times, 8.1 is accurate. It’s legit New Haven style pizza. They know what they’re doing.

I love that the cook is wearing a Pizza Planet shirt. No official uniform, just wear a shirt that references pizza.
This pizza looks objectively very delicious, if a little bit floppy, and I think the chefs are quite right to stand up for the quality of their product. The extra moisture is because they are using high quality tomatoes and cheeses and dough.

At 2:40, when the owner says "Anytime you put a pizza in a box it has flop", I rolled my eyes. As if Dave hasn't reviewed over 1,000 pizzas that all came from a box.
theres been quite a few episodes where owners intentionally leave pizza box open, ofcourse he knows it, but if you put pizza that you just made inside a box and close the box, ofcourse its gonna be floppy in the middle, if it cooled down for 2 minutes outside the box it would still be hot but not as half as floppy. also floppy doesnt equal doughy or bad. i think Dave is starting to realize that too.

I'm from LA, but have been lucky that my work took me through New Haven a couple times. Both times I ordered a pizza from Sally's and Pepes, ate pizza for the next two days and froze the rest. He's right about Sally's, it doesn't have much cheese and is more like a tomato pie but man it is the best pizza I've ever eaten. Here's the thing though, you have to eat it that day because it's so saucy and it dries out the next day. Pepes on the other hand is even better the next day and unlike Sally's, its substantial.

Steamed in the box. They needs to have vents in the boxes or some shit. It's like when you order something with french fries for delivery, always steamed.
Grew up on this place. Been to all of the places in CT. Olde World, Sally’s, Modern are my top 3 by far.

That shot at Pepe’s was a bombshell if true. The cook worked at Modern which is my favorite. Sally’s has a cool old vibe, but the cook is right - very little cheese and too light and crisp.

While I appreciate Dave’s commitment to sticking with his initial score there are time when I think an exception applies to where once the owners walk away he can give the real score.

A lot of folks saying he felt pressured to give it over an 8 and succumbed. I say it's bullshit (like half his scores), but in the other direction. This place is generous with its cheese, and that's all there is to it. The ingredients and style (perfectly charred crust, the bubbles, great sauce I'd be willing to bet), and because the thing sitting in the box inevitably got some "flop" (which most people don't mind and actually enjoy), he took off points because he wants to seem consistent. These guys devoted decades to their craft and OBVIOUSLY mastered it. Giving an 8.1 and doing it as if it's a gift or giving into pressure is an insult. If Dave wants half the cheese so he'll get that cracker effect, let him come back and ask "light on the cheese." But it's a big joke. That was obviously fantastic classic New Haven pizza.

Its floppy when you cook it at too high a temp for too short a time. That's why Neapolitan is floppy. It's cooked at 900f/400c for one min.
So the outside cooks but the moisture in the dough/toppings doesn't have time to cook out.
The places that have crisp generally have it thin but cook at a lower temp for several minutes. Also places like de Lorenzo's place the tomato's on top so the base gets less soggy (they also cook it for several minutes).
The box affects it...but that pizza would have been that way regardless.
Btw i love these reviews where dave is focused on the pizza and cuts out the fluff. Good work el presidente! :)
The second the workers came out of the shop, they reeked of desperation, defending the freshness and flop… and it worked. “It doesn’t taste floppy… do you know what I mean?” Yes Dave, we do. You were “muscled” into a higher score. An 8.1 is generous. It looked floppy, a little greasy and it just couldn’t hold the cheese on well.
I’ve been there and the pies are amazing. You NEED more cheese on a pie than the places Dave prefers. Bar none. You just need more cheese, and that is what creates the flop. It’s the moisture and the oils. This place is cranking out 8.4s on a regular basis. Give em their credit

8.1 is probably the most professional score for this pizza, 100% agree. It's still above average pizza and worth it totally. The value/price of it is probably the best I've ever seen.

When he went to Papas in Milford there was no flop and they should of gotten at least in the mid 8's, and he gives this an 8.1. I definitely think he was persuaded here. Gotta have the crunch to be in the 8's.

That used to be one of my regular stops when I worked in the area. It's a legit 8.5, he didn't cave to the "muscle". I will admit that it was much "floppier" than I remember, don't know
what was going on with that one, might have been undercooked by a minute or so. It is a great pie, place was founded by guys from Modern. Too bad, that should have been a mid 8 score.

Was sure this was going to be 8.4 minimum, but they were kind of lucky he gave them the 8.1. Don't think he's ever given a review above an 8 for a pie with the dreaded "flop". Either way, it's not going to hurt or help them, everybody in the area knows about that place. Just looked at the thumbnail of the pie again, you're right, they definitely went overboard with the cheese, way too much. See, this is what happens when a new "generation" takes over, they start messing with the magic. This pie does not need that much cheese. It's a testament to the taste of the pie that Dave still gave it a score in the eights with that flop.

Iv been to Angelo’s which is highly rated by Dave and I did think that the bottom was too done, close to burnt made it tough to it. However, it was still amazing. So I do agree with the owner saying people might complain about a burnt crust. The box causing steam is also true but many of Dave’s reviews come from the box and it is still no flop.
