  • INGREDIENTS
    • Rice
    • cut pork chops
    • minced onions
    • minced garlic
    • lemongrass or lemon zest
    • green onions
    • lemon
    • fish sauce
    • soy sauce
    • honey
    • brown sugar
    • granulated sugar
    • vegetable oil
    DIRECTIONS
    1. Make a marinade for the pork chops by mincing onion, garlic, and lemon zest.
    2. Combine all 3 in a clean bowl then add tablespoons of fish sauce, soy sauce, honey and sugar.
    3. Pour it over the pork chops, cover and let it sit for minimum of half an hour or overnight.
    4. Rinse the rice until the water is clear and cook.
    5. Make the sauce by adding fish sauce, water, sugar, and lemon. Whisk well then taste and adjust with sugar and lime.
    6. Add oil in a shallow pot and cook on medium for 5 minutes, slice about 4 stalks of scallions and place in a heat resistant container and add a pinch of salt. Pour the hot oil into the container and let it sit to cool.
    Peel and slice the cucumber and any other veggies you want to put on your plate.
    7. After one hour or overnight place pork chop in the oven for 20 minutes at 375 fahrenheit. After 20 minutes finish off the pork chops on a cast iron on medium high for 2 minutes on each side.
    8. Fry a sunny side up, make sure it has crispy edges by cooking it in shallow oil on medium high and use a spoon to baste the oil on the whites of the egg.
    9. Assemble the plate by placing down the rice, then pork chop, fried egg, veggies, pickled veggies, sweet fish sauce, and a glaze of scallion oil on the pork chop and rice.
