BETH'S EASY CHOCOLATE LAVA CAKES
Serves 4
INGREDIENTS:
1 cup (240 ml) Semi-Sweet Chocolate Chips
5 tbsp (75g) butter
½ tsp (2.5 ml) instant coffee
1 tsp (5 ml) vanilla
2 eggs
2 egg yolks
¼(1.25 ml) tsp salt
¼ cup (30 g) of flour
Cooking Spray (preferably the baking spray variety)
2 tbsp (13 g) Confectioner's sugar
Vanilla Ice Cream
4 raspberries
METHOD:
Preheat oven to 450F/232C
Spay 4 6-0z ramekins with cooking spray and set aside.
Melt chocolate chips and butter in a microwave in 30 sec increments until melted and smooth. Add coffee, vanilla and salt. Add in eggs and egg yolks.
Stir in flour. Fill each ramekin 2/3 of the way full.
NOTE: At this point you can cover each ramekin with foil and refrigerate until ready to bake and serve.
Place ramekins on a cookie sheet and bake for 10 mins. (NO LONGER!) Centers will still be concaved.
Allow to cool just until cool enough to handle. Place plate on top and flip ramekin over. Dust with powdered sugar and top with a fresh raspberry. Serve with a scoop of vanilla ice cream

So, the date is about any love one, whether is a friend, a family member or your partner in life, all of them are part of the date and that's why I like the latinamerican celebration, NO exceptions :) great recipe.

Thank You Beth... for a wonderful recipe! I made these for my family for Valentine's and they were absolutely delectable!!! Your tips made this so easy to make and I could get them ready in a jiffy!! And perfect results. The only change I made was to add one tbsp of sugar (as we like it a bit sweet) and I coated the remekins with butter and sugar to get a crisper outer edge! I am never going to look another Choco Lava recipe again!!! Thanks again!

My family had lava cakes when I was growing up, but I’ve seldom seen them since, so I’m excited to try this recipe! It looks delicious!
I used small ramekins and baked them for only 8 minutes and they came out PERFECT!! I have tried a few molten lava recipes, this is by far my favorite!

Thanks for the recipe, this was so easy to put together! I made them today and even though I didn't have cooking spray they slid right out. I just used butter and then coated with powder sugar. They were delicious but I think I over baked them since it wasn't as gooey in the center but I have half the batter left over so hopefully it works out tomorrow!

Hi Beth, I've tried baking this & it's very successful (it's the 1st time I tried baking Lava Cake, I thought it's difficult), thank you so much! It tasted good & it's perfect dessert for the Valentine's Day!! Since I don't have any cooking spray on hand & you said butter didn't work, I used olive oil (the type suitable for cooking, not extra virgin one) instead to brush the ramekins, it turned out quite good--the cake came out easily once the ramekin was flipped over. ; D
just made 2 of these for my brother and i....BIG HIT!!! amazing! definitely will make them again, only took 15mins!

Beth! I'm so glad I found your channel, you're so sweet and your recipes all look so easy and amazing! I made these (literally just now) and doubled the recipe, made them in my toaster oven and they came out PERFECT! My fiance just walked in the room with eyes wide open and said "this is greatest thing you have ever made" haha. so thank YOU! for the easy, great recipe. I sprinkled it with some powdered sugar and 2 small scoops of Arctic Zone ice cream (low cal, lactose free) and it was BANGIN! so you are now a celebrity in our house just so you know ;-)

I made this in less than 5 mins and used a bug coffee mug to mix it in. What a great recipe that you can throw together in an emergency! I cut the recipe in half to make a single serving since no one else in my house likes chocolate. More for this girl!

Your recipes are always truly foolproof! Thank you! I guess last night dinner was approved thanks to this delicious dish! However, maybe it's my oven, but 10 minutes are a bit too soon to take them out. I checked on them and took them out at 11.5 minutes and it's still a bit too soon. I'll try again next times to find the perfect timing using my oven! 🍫
