Caverry Amma & Vidya Recipe - Cooker Sambar (One pot dish)

  • The authentic Palakkad Brahmin cooking in Tamil.
    Ingredients:
    Veges [ like ash gourd, pumpkin, Capsicum, carrot, tomato or of your choice] - 2 cups
    Coconut oil / Clarified butter (thenga ennai / nei) - 1 tbspoon
    Tamarind (puli) - 1 gooseberry size
    Jaggery (vellam) - 1 small piece
    Turmeric powder - 1/2 tspoon
    Green chilly -1
    Sambar powder - 1 and 1/2 tbspoon
    Asafoetida - 1/4 tspoon
    Thuvar dal - 1/2 cup
    Moong dal - ¼ cup
    Salt - to taste
    Water - as required
    To temper
    Coconut oil/ clarified butter (Ghee) - 1 tspoon
    Mustard - 1/2 tspoon
    Fenugreek seeds - 4 to 5
    Red chilly - 1
    Curry leaves - 4 to 5
    *Quantity of tamarind, chilly, jaggery depends on individual taste

    Very nice. I think it will be perfect to mix it with rice. It will get quite thick after cooling down so may not work best as a side dish for tiffin items.

    Mam saw this video now and liked it very much. but nothing to beat our traditional making of sambhar the method you have shown is ok but if you were to mash Dal properly then all veggies get sogged .if you want veggies to be partially boiled then Dal is not cooked properly and does not mix with water and veggies properly what to do? your opinions and comments are highly valued thanks god bless you and your family

      Thanks for your feedback. Of course, traditional way of making sambar is exemplary. In this fast world, this is another variance for easy cooking. However if you can follow the video precisely, you can attain the consistency to a reasonable extent.

    Good. But we don't add salt in our one pot sambar or rasam. After the 3 whistles we add salt in the end. We use only curry leaves for tempering Sambar. Looks good 👍. Always a pleasure to see your videos Ammai.

    You can experiment putting rice ( soaked for 1/2 hour ). Then it is ready to eat fully cooked sambhar rice 😅 in one stroke 👍
