I am so glad black hat talks have actual titles. The German CCC equivalent title could have said 'about suckers and blowers' and nobody would have known what it is about. Not that those are bad talks by any means.
I have not yet watched they video but I am confident you will follow up.

Sounds like the same i see in building automation every day, un-updated legacy OSs runnings old installations, running even older controllers with no encryption anywhere, everything connected to the internet by some sub-standard web interface made by a random employer in 1998.

Security in refinery and pipeline SCADA systems are just as bad, there are thousands of massive sites, worldwide, that are only protected by virtue of being behind 2 or 3 VPN hops, that’s it … and those VPNs are under nearly constant attack, 24/7.
I’m really surprised there haven’t been any major (eg. big enough that money can’t cover it up) incidents in the petroleum sector yet.

Given I want to hack a wind farm or a solar power plant, what key steps should I follow?

much more dangerous than hard stopping repeatedly would be turning every turbine on and letting them run at maximum speed when there's strong wind...
