That looks like a great holiday especially at that time of the year. If you ever consider a Cross Country MTB, in stead of a gravel bike I would recommend looking at a 2x11 gearing. That rides well on the flats and in the mountains. 1x12 is only suitable for in the mountains. I have both options and the 1x12 slows you down here in the Netherlands.
