The trick is to first pull the wings upwards until you hear the cartilage break. Then you can pull them down into the hole with the stuffing, and finally tie the legs so the wings won't come out again.

It's a shaving bench, sometimes called a shaving horse. And no, he did not invent it. It has been around for thousands of years.
Did you use a saw to cut that first basic shape?
Based on the marks on the wood, he used a band saw. A shame, as that kind of defeats the all-by-hand aspect of whittling.

Thats the most hardest part to make, rest is easy, to colour, add wings, legs etc, body is most complex.
