    For the Sandwich:
    2 slices of whole grain or your favorite bread
    1 cup cooked and shredded chicken breast (seasoned with salt and pepper)
    1/4 cup mayonnaise (optional)
    1 tablespoon mustard (optional)
    1/2 cup mixed fresh vegetables (lettuce, tomatoes, cucumbers, bell peppers, etc.)
    1/4 cup shredded carrots
    1/4 cup thinly sliced red onion
    1/4 cup avocado slices (optional)
    Salt and pepper to taste
    For the Chicken Marinade (optional but recommended):
    2 tablespoons olive oil
    1 tablespoon lemon juice
    1 garlic clove, minced
    1 teaspoon dried oregano
    Salt and pepper to taste
    Instructions:
    Prepare the Chicken:
    If you are marinating the chicken, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add the chicken breast, coat well, and let it marinate for at least 30 minutes.
    Cook the chicken breast by grilling, baking, or pan-searing until fully cooked (internal temperature of 165°F or 75°C). Once cooked, let it cool slightly and shred it.
    Prepare the Vegetables:
    Wash and slice all the fresh vegetables: lettuce, tomatoes, cucumbers, bell peppers, carrots, and red onion.
    If using avocado, slice it just before assembling the sandwich to avoid browning.
    Assemble the Sandwich:
    Toast the bread slices if desired.
    Spread mayonnaise and mustard on one side of each bread slice (optional).
    Layer the shredded chicken on one slice of bread.
    Add the mixed fresh vegetables, shredded carrots, sliced red onion, and avocado slices on top of the chicken.
    Season with salt and pepper to taste.
    Top with the other slice of bread.
    Serve:
    Cut the sandwich in half if desired and serve immediately.
    Tips:
    You can customize this sandwich with your favorite vegetables and spreads.
    For added flavor, consider adding a slice of cheese or a dollop of hummus.
    If you prefer a warm sandwich, you can grill it in a panini press or on a stovetop grill pan.
