    Regarding the manufacture heads of flush rivets (AN426ADx-x) being an allowable .005" proud of the material they're set in. The thickness of a sheet of copy paper (20-pound) is .004". .005" is not an eyeball tolerance that would jump out at anyone, but is an acceptable tolerance. Realistically, a .005" rivet head set isn't even a tolerance an amateur, let alone an experienced builder, could consistently set. Times what, 2K+ times, setting each and every rivet in a machine-countersunk hole at plus-zero/minus-zero the material surface? Good luck with that!
    The bottom line is that when your Airworthiness Certificate is granted at the completion of your build, it'll be issued on a level of 'acceptable', not 'perfection'.

      Yeah, I know its kind of petty... I guess I'm too close because when I run my hand over it I can feel it and that bothers me... not sure why, but it does...
