I am a student from China, and I am also a fan of Jay. I would like to share my point of view about the concern that you have mentioned at the begining of the video.
Actually, the beginning shows that this boy is writing a love letter to this girl and he is too shy and nervous to interact with her, so he picks up the guitar the time the girl notices him, and pretend that he is playing. It is not a mistake, but it vividly described complex emotions at this moment when he encounters with his first love.
By the way, MV of Jay Chou uses montage to connect the story acted out by the actor and actress and his music performance of Jay singing and his partner playing the guitar. So there are two plots entertwined, main plot is the love story, the other one is Jay's performance. Jay's appearance functions as a break or breath of the main plot. This is commonly seen in his video.
