Hanging a Chicken and Some Sausage in the Drum Smoker | A Hunsaker Kinda Day

  • I wanted to make some Jambalaya so I needed some good chicken and sausage so I thought I’d hang it in the Hunsaker Drum Smoker today. As usual the 55G Hunsaker nailed it…it is hard to imagine a better chicken. I also use Malcolm’s King Craw Cajun Seasoning which I absolutely love.

    Love the video! Watching you and Ry, I am seriously thinking of investing in a Hunsaker smoker. Question: can the Hunsaker hold stable low temps in the 150 - 200 F range? I would love to use it for smoking jerky but everything I am seeing seems to indicate that it prefers to hold at 275 F. Just wondering what your experience has been in terms of temp range and versatility. Thanks!

      you can get temps that low if you have a small fire i would think but I haven’t tried per se. The tricky part would be to set it up so you wouldn’t have to add fuel as that is tricky in the Hunsaker…though not impossible. Maybe you could choke it down enough to keep it that low. Honestly, if it were me, I would do jerky in a different cooker. Thanks for watching!

    The chicken look perfect juicy turn your sausages crosswise of each you might get better smoke results that way just suggestion

    very Juicy...how big was the chicken and how long cooking at 330 did it take to reach 160? ive hung halves never whole chicken

      wish I could remember. generally though I have found whole cluckers to take 90 minutes give/take.
