    You got me with "doesn't make my stomach hurt". I can't drink coffee any more because it tastes great going down but feels like drain cleaner in my stomach. I have got to try Filipino coffee now. Thanks, Jeanelle

      Have you considered trying decaffeinated coffee?
      My mom has the same issue with regular coffee until she tried decaf.

      Thats one of the things i like about coffee especially in the morning. It does scrub your stomach like a brush. I feel like a pound lighter after it.

      There’s different reasons, why coffee can make your stomach hurt/make the “coffee runs” too err runny…
      1. The acidity. Robusta (which these Philippino beans most likely were) has a much lower acidity level. That’s because the beans soak in the flavors of the actual berry flesh around them and because robusta is not grown as high up as Arabica, the berries are also less flavorful and acidic.
      2. The caffeine. Then coffee that has had the caffeine removed is for you. Or there are some rare strands of Ethiopian Arabica, that are actually almost completely without caffeine naturally.
      3. It’s not the caffeine it self doing that whole “coffee runs” thing happen though. It’s something else in coffee beans and even decaf has the same effect on humans
      4. Unfortunately coffee is very complex. So there are literally hundreds of reasons why it can make a persons stomach hurt. I had a ex coworker explain it to me once (worked in a roastery and she was studying nutrition science) but it was too complicated to rmr. Basically just try robusta or very dark roasted (acidity goes down the longer you roast the beans. It literally burns off) or decaf. If those don’t work then don’t do coffee. You can get caffeine from mate, tea and sodas instead. Also the caffeine’s in them are all a little different between each other, so one might work better for you.

      @@simplydelicious472 No, decaf is actually more acidic. If decaf doesn't hurt her it's likely that her pain is for a different reason.

      try French press! its less acidic, same with cold brew. I am very careful about what coffee i drink because of my stomach condition and the pain it can cause! hope this helps!

    Whenever I go up Baguio, I buy a kilo at the public market. Way cheaper and can buy the beans or have it ground right there. It's strong but not bitter. I usually take mine black, sometimes I add a teaspoon of brown sugar, muscovado or coco sugar. Also tried the Kalinga rice coffee. That's one of the best. Not too strong and has that naturally sweet flavor.

      yess idk what its called but we bought coffee granules in baguio, its not beans but its not powder either. its effin delicious and i will buy if i ever go to baguio again

    Tried it before when I visited an Army buddy of mine in San Diego just after I left the service in ‘95 and before moving to Australia. It was really nice black, not very strong and goes really well with the purple sticky rice pudding topped with toasted coconut.

      It's called cold brew but normally u have to steep it at least 16hrs. Can do room temp or leave it in your fridge. I usually prepare my cold brew the day before then I'll have it next day

      Haha me too. I'm a Filipino but it usually doesn't look like that. It depends on how you brew your coffee. We have a lot of variations of coffee and my fave smells nutty and caramelly without the nuts and the sweet stuff. I don't know how they did it but because of that, I can drink them straight black coffee because of that amazing aroma. Mostly our coffee beans are dominated by two kinds - Arabica and Robusta.

      @@nivedyaraj852 ahaha silly me, of course. On this video BTW is a Philippine Liberica coffee bean. This type of coffee bean is much more available in our Luzon area(which is now considered extinct) and I'm from Visayas which blended coffee beans(excelsia, robusta, arabica) are dominant, I only tasted these Liberica beans a few times and I don't quite like the sharp smell of it. Some ppol say it is the epitome of resilience and fortitude. And, are not for the faint of heart.
      Maybe that's the reason why they're brewing it that way.

    Barako used to be the king of Filipino coffee varieties outside the country. I can also drink it black without my stomach hurting.
    I have yet to try other varieties like that from Sagada

    I used to love benguet coffee but now I can’t handle caffeine 🥲 switched to black rice coffee and it tastes good so far! The one i got from surigao has a tablea/ chocolate-like mild sweetness to it.

    When you've tried civet coffee, then you've had a 'Filipino coffee.' The Philippines was once a major supplier of coffee to the world in the 1800s, so the pedigree is definitely there. Not mention we have the perfect climate to grow all four coffee varieties.

      There’s 6-7 varieties depending on wether or not you count Geisha as it’s own or under Arabica. But even if only counting the four most known/grown/popular, really only robusta is grown in the Philippines. Because even though it’s possible to grow for ex. Arabica, it’s not very smart, because the climate, soil nor altitude are, unfortunately, good enough for rally outstanding crops. And to grow just mediocre arabica doesn’t really make sense, when there are already massive amounts of that harvested in Brazil every year. So to focus on getting exceptionally good Robusta is a much better plan.

    Barako is the best! It's the only coffee I can drink black too. Others need to be in a latte since I don't like the weird fruity, acidic taste.

    if you want to have coffee that's less acidic and bitter , get a cold brew pitcher on Amazon, they're like 20$ , cold brewing doesn't extract some parts od the grounds that make it more acidic and bitter. You have to use more coffee grounds but it's totally worth it.

    I am amazed that there is not more Philippino products here in the states. I also live in California and my family has 5 generations of Philippino/American heritage as part of it's huge family tree. And I know so many people who have either immigrated here or are also multi generation Philippino/Americans. Yet it is only in the last few years that I have seen restaurants and stores...of course I live in the Mojave so maybe it just took awhile despite the large comunity of Philippino heritage in my city (we are are own little landlocked island out here, If it were not the desert it would be perfect!)

    “Vietnamese coffee” is usually Robusta instead of Arabica. Her saying that the Philippino coffee is deep, full bodied, melow and less acidic probably means that those beans were Robusta as well. So yeah, less acidic but also less flavor, notes and complexity. But most likely more caffeine though! (Robusta usually has 1,5-3x more than Arabica). Nothing to do with the volcanic soil (even though soil DOES play a big part with coffee, but really only when in context of Arabica. Robusta does not and will not have that much difference, no matter what). Robusta is mostly used with espresso blends and therefore works well as a base for milk based espresso drinks
