Spice World Roasted Garlic Flat Iron
If you know me, you know I love beef and I love Garlic!! This recipe has grown to be one of my favorites and it has both!!
**What You Need**
- Flat Iron Steak
- Spice World Garlic (Squeeze Garlic)
- A good Fine Sea Salt (Townsend Spice and Supply)
- 1/4 Cup Olive Oil
The first thing we need to do for this recipe is get the salt on the flat iron. Of course trim off any unwanted silver skin or fat. I used the townsendspice.com Fine Sea Salt. I love this stuff because it is so fine and dissolves almost instantly. This is going to add some flavor as well as start breaking down this flat iron and getting it tender. Once the salt is applied I placed the flat iron back in the fridge for about an hour. This gives you time to make the roasted garlic marinade.
For the marinade, I simply add 1/4 cup of olive oil. and 1/2 cup of garlic to a sauce pan. I set the cooktop to a medium heat and stirred occasionally. Keep a close eye on it and continue to cook the garlic until you get a good golden brown color. Once you get the color you would like simply, remove from the heat and place in the fridge.
After the steak has salt brine for an hour, remove from the fridge and place in a ziplock back. Its now time to add the garlic marinade. Once you get I all in the ziplock bag, toss around and get all side covered with garlic. You can come by every few minutes and give it a toss during the 2 hours of marinade process.
You can cook this recipe on any grill you would like, just set the grill up for searing and maybe have you a cool spot or raised rack to go to if needed. We used our grillagrills.com Kong with some good ole www.royaloak.com/ Lump Charcoal. We ran the pit temp in the 500-600 degree range and cooked directly over the coals.
Once we got the flat iron on the grill, I adjusted the cook in order to get the color and sear we were looking for. It's always good to have a little extra room on the grill so that you can move the steak around and get the finished product you are looking for. We took this flat iron to an internal of about 127-130. Once we reached that temp we allowed it to rest for about 15 minutes.
The final product was outstanding!!! The garlic flavor was perfect and the texture was unbelievable!! This is a recipe you got to try!!

I know a flat iron taste different from a rib eye. I will have to try the garlic out. I’ve tried a good steak seasoning on flat iron and it was decent. but I really wish flat iron had more good beef flavor.
Definitely give it a shot. The more rare the flat iron is the more it has that rich beef flavor. The salt helps a lot with that as well. Appreciate you checking the video out!

It's near impossible to get flat iron steaks in my area, but I have a nice skirt steak in the freezer that I've been wanting to do. Think this marinade will work? Our parsley plants can't grow fast enough to produce enough for chimichuri!

I want to reverse sear a tri-tip soaked in that marinade. Afraid the garlic may burn though. Could brush off any left over when it’s done with the smoke part before it hits the fire?
You could. I think by the time you seat it it prolly won’t be much garlic left on it anyway. I bet that would be awesome tho!!
That’s definitely not roasted garlic. It’s fried garlic. For roasted, take whole garlic bulbs, slice the tops off and liberally drizzle with olive oil on top. Either roast in the oven or grill in a dish or wrap in foil until soft. When soft, squeeze the cloves out and it should be a soft paste or much. That’s roasted garlic.

Perfect cook but I don’t think it’s necessary to rest it for 15 minutes. Five should be sufficient for a steak that size especially if you want it to still be hot when you’re eating it.
I am interested in your method of not putting a grate on right away so that it is cold when you put the steak on. Is that just for thin cuts like flat iron, or do you also do that for cuts like strip or ribeye, assuming you aren't reverse searing those?
This method works great on most any cut. It allows the actual heat from the fire to sear the steak and not the surface temp fo the grates to sear the steak. There is several great video out there doing this method.

We are pretty lucky in our area, they usually keep them in stock at our Kroger. I wish that was case for tri-tips and other great cuts.

Not that I can tell. Some falls off and some stays on and cooks. Thats one reason I did not just sear it hot and fast on the front end. The flavor was almost buttery garlic! It was great!
