Correction: Hermod actually uses necromancy attacks, not melee. He's still super easy and I have come to prefer soul split anyways over deflection prayers anyways.
Other Tips:
-You can use surge while in the boat
-If you talk to Sammy or Deano who are rowing in the lake they both give you 25 souls each
-You can catch ghost implings while in the water
You can also use Dive! =)

Another tip is only take nearest wayward soul -> lobby -> take the boat again and the nearest soul -> repeat

tip for finding the wayward souls.. if you play in one of the 2 lower reso go to medium so you can have a bigger view of the lake.

Hermod counts as undead so if you are having trouble with hitchance you can use a salve(e) amulet here for 20% higher damage and hitchance
I've been farming souls using dragon bones (cheap), regular candles and Multiply II glyph (gives 14 souls per ritual).
Someone might need to run the math on this but I don’t feel like using cheaper bones are actually that much cheaper considering you need more materials for more rituals and those prices are high right now. Regardless all those bones for the greater communion ritual can get you there pretty quick.
You can use the surge ability when you're in the boat!
Protip: Turn your graphics up, you actually can't see the the obols/souls on lowest settings. You have to get much much closer to them. i went in circles 3 times before I realized this
because your handslots are empty - you can catch ghost implings while on the water rowing about..
I tried it and it worked, ghost impling, regular candles reward.

catch ghost impling with full set ghost robes on, and it completes an achievement. @@Stan_in_Shelton_WA
Prayer to use, what about deflect necromancy? are Hermod's attacks mele or necromancer based?
Might actually be necromancy, not melee. Honestly I wouldn’t really worry about it. I have killed him over 100 times already on normal mode with absolutely no food, only soul split.
